Orcas student Huxley Smart will prepare locally-sourced school lunch for senior project

Orcas High School senior Huxley Smart will be preparing and serving a very special lunch in the school cafeteria for up to 250 people on Wednesday, Sept. 28.

Orcas High School senior Huxley Smart will be preparing and serving a very special lunch in the school cafeteria for up to 250 people on Wednesday, Sept. 28.

For her senior project, Smart chose to create a school lunch made from nothing but ingredients found on Orcas Island.

Smart’s menu will be Shepherd’s Pie made from Coffelt beef, potatoes and vegetables such as carrots, onions, garlic, celery and green beans, which she secured doing work in trade for Maple Rock Farm. For dessert, she is making fresh apple sauce from apples recently gleaned from trees on Bob and Phyllis Henigson’s property in Deer Harbor.

“One of my real challenges was salt, so I went down to North Beach and got a gallon of sea water, boiled it down and got much more than I’ll need! I was really surprised,” says Smart.

Adults and kids alike are invited to experience the meal between 11:30 a.m. and 12:45 p.m. in the school cafeteria. Lunch is $2.50 kids and $5 for adults; includes a beverage and a pass at the fresh salad bar.
